GALLINA
Traditional Aymara dish made with
chicken and locoto (hot andean chili)
INGREDIENTS
1 ½ kg chicken
4 tablespoons cooking oil
1 chopped onion,
1 cloves garlic; chopped
6 green chilies; chopped
4 slices white bread
100 gr. peeled walnuts
1 tablespoon grated cheese
1 can evaporated milk
6 yellow potatoes; cooked
6 hard boiled eggs
salt and pepper to taste
PREPARATION
Chop the chicken into pieces. Put into
pot of salted water and boil it. Remove the pieces from the pot.
Bone, remove skin and crumble it. Reserve the broth.
In a saucepan, heat oil and fry the finely chopped onion, garlic
and chilies. Add salt and pepper to taste. Fry until almost golden.
In the meanwhile, remove
crust from bread. Crumble the bread and soak lightly in the both,
then add to the saucepan and fry with vegetables for 10 minutes.
Finally, add walnuts along with the crumbled chicken and sliced
cheese. Soak for 10 minutes. Add milk and mix. Serve and decorate
with potatoes and eggs.
